New Retailing Problem for an Integrated Food Supply Chain in the Baking Industry

As coronavirus disease 2019 (COVID-19) continues to spread, online consumption habits in China have changed significantly. Thus, the booming online-to-offline (O2O) food ordering and delivery industry via bakery been changing customers’ shopping behavior. This article proposes a comparison relying on advanced O2O strategy for single-vendor-single-retailer integrated system. Three coordination mechanisms consist of revenue-sharing, buy-back, quantity flexibility contracts employed optimizing order quantity. Replenishment strategies temperature supply chain members are considered based new retailing framework. Herein, authors suggest an algorithm computation optimal solution. Lastly, numerical examples sensitivity analysis also conducted clarify usefulness proposed model chain. Sensitivity revealed number managerial insights. For example, results obtained under operations can be compared with those online/offline (under various parameters settings) determine opportune moment three mechanisms.
